BAHAN-BAHAN:

BOLA UBI:

Ubi ungu (berat setelah dikukus) - 300 gram

Tepung tapioka - 100 gram

Gula pasir - 30 gram

Air - 100 ml

BUBUR CANDIL:

Air - 1 liter

Gula pasir - 200 gram

Garam - 1/4 sdt

Daun pandan, ikat simpul - 1 lembar

Tepung tapioka, encerkan dengan sedikit air - 50 gram

KUAH SANTAN:

Santan - 350 ml

Garam - 1/4 sdt

Daun pandan - 1 lembar

Maizena, encerkan dengan sedikit air - 1 sdm

Langkah memasaknya:

-Bola Ubi: Haluskan ubi ungu kukus yang masih panas sampai lembut, kemudian tambahkan tapioka dan gula pasir, aduk rata.

-Tuang air sedikit-sedikit sampai tekstur bisa dipulung. Bentuk adonan menjadi bola-bola candil kecil.

-Rebus air dengan gula pasir, garam, daun pandan sampai mendidih. Setelah mendidih masukkan bola-bola ubi. -Masak sampai bola-bola ubi mengapung.

-Masukkan larutan tepung tapioka sambil diaduk, masak sampai mengental. Matikan api, sisihkan.

-Kuah Santan: Masak santan, garam dan daun pandan sampai mendidih. Tambahkan maizena yang sudah diencerkan. Aduk rata sampai kuah mengental.

Sajikan bubur candil dengan disiram saus santan.
